This Crockpot Creamy Potato and Hamburger Soup is a hearty and comforting meal featuring ground beef, tender vegetables, and a rich, cheesy broth. It’s easy to prepare in a slow cooker and perfect for weeknight dinners or meal prep.

Ingredients

1 pound ground beef

1 medium onion, diced

3 cloves garlic, minced

4 cups potatoes (Yukon Gold or russet), peeled and diced

2 cups diced carrots

2 stalks celery, diced

1 cup frozen corn

4 cups beef broth

2 teaspoons dried Italian seasoning

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons butter

3 tablespoons all-purpose flour

1 1/2 cups whole milk or heavy cream

1 cup shredded cheddar cheese

Fresh chopped parsley, for garnish

Instructions

  1. Lightly grease the insert of your slow cooker.
  2. In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat.
  3. Transfer the cooked beef to the slow cooker.
  4. Add onion, garlic, potatoes, carrots, celery, corn, beef broth, Italian seasoning, smoked paprika, salt, and black pepper. Stir to combine.
  5. Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the vegetables are tender.
  6. About 30 minutes before serving, melt the butter in a saucepan over medium heat. Whisk in the flour to create a roux and cook for 1–2 minutes.
  7. Gradually whisk in the milk or cream, stirring until the mixture is smooth and slightly thickened.
  8. Stir the roux and shredded cheddar cheese into the slow cooker. Mix until well combined and creamy.
  9. Cover and cook for the remaining 30 minutes.
  10. Serve hot, garnished with fresh chopped parsley.

  • Swap ground beef for ground turkey or chicken for a lighter version.
  • Add spinach or kale in the last 30 minutes for more greens.
  • Sweet potatoes can replace regular potatoes for a different flavor.
