Creamy Caprese Pasta Salad is a fresh and vibrant dish inspired by the classic Italian combination of tomatoes, mozzarella, and basil. Tender pasta is tossed with juicy cherry tomatoes, creamy mozzarella balls, fragrant basil, and a light olive oil and balsamic dressing.

Ingredients

1 pound small pasta (fusilli, orecchiette, or penne)

16 ounces mozzarella balls (ciliegine or pearls)

3 cups cherry tomatoes

1/2 cup thinly sliced fresh basil

1/3 cup extra virgin olive oil

3 tablespoons white balsamic vinegar

1 teaspoon kosher salt (plus more for pasta water)

1 teaspoon freshly ground black pepper

1 clove garlic, minced or pressed

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta and rinse briefly with cool water to stop the cooking process. Let it cool completely.
  3. In a large bowl, combine the cherry tomatoes, mozzarella balls, and sliced basil.
  4. In a small bowl, whisk together the olive oil, white balsamic vinegar, minced garlic, kosher salt, and black pepper until well combined.
  5. Add the cooled pasta to the bowl with the tomatoes and mozzarella.
  6. Pour the dressing over the pasta mixture and gently toss until everything is evenly coated.
  7. Taste and adjust seasoning if needed.
  8. Serve immediately or refrigerate for about 30 minutes to allow the flavors to meld.

Notes

  • Add grilled chicken, shrimp, chickpeas, or sliced salami for extra protein.
  • Whole wheat or gluten-free pasta can be used as a substitute.
  • Regular balsamic vinegar or red wine vinegar can replace white balsamic vinegar.
  • Add a spoonful of pesto to the dressing for richer flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • If pasta absorbs dressing during storage, add a small drizzle of olive oil before serving.
  • Add basil just before serving to keep it fresh and green.
