Ingredients

1.5 cups 1% cottage cheese

2 eggs, room temperature

2 tbsp cream cheese

1 scoop of vanilla protein powder

2 tbsp monk fruit sweetener or maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine all the ingredients and blend until smooth.
  3. Pour the mixture into a cheesecake pan of your choice.
  4. Bake at 350°F for approximately 35 minutes, or until the cheesecake is set and slightly golden on top.
