A quick and easy classic chicken salad featuring tender chicken, crunchy celery, and a creamy, tangy dressing. Perfect for lunch, snacks, or sandwich filling.

Ingredients

4 cups cooked chicken, shredded or diced

1 cup mayonnaise

½ cup diced celery, ¼" dice

⅓ cup diced red onion or shallots, ⅛" dice

2 tablespoons sliced green onions or chives

1 tablespoon Dijon mustard

2 teaspoons lemon juice

½ teaspoon kosher salt

¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine chicken, mayonnaise, celery, red onion, green onions, mustard, lemon juice, salt, and pepper.
  2. Stir well until everything is evenly mixed and the salad reaches your desired consistency.
  3. Taste and adjust seasoning with additional salt and pepper if needed.
  4. Serve immediately or chill in the refrigerator until ready to eat.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Do not freeze as the mayonnaise may separate.
  • Use rotisserie chicken for convenience.
