Chocolate Raspberry Crumb Bars are a delightful combination of rich chocolate, sweet-tart raspberry preserves, and a buttery, crunchy crumble topping, making them an irresistible treat for any occasion.

Ingredients

16 tablespoons unsalted butter (2 sticks) – softened

½ cup light brown sugar (packed)

2 cups all-purpose flour

½ teaspoon salt

½ cup chopped pecans or walnuts (optional, can be toasted)

14 ounces sweetened condensed milk (1 can)

1 cup bittersweet chocolate chips

½ to cup raspberry preserves (seedless, optional)

1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper and spray with nonstick cooking spray. Set aside.
  2. Cream the butter and brown sugar together for 2 to 3 minutes until light and creamy.
  3. Add the flour and salt, mixing until combined. The dough should be crumbly.
  4. Set aside about ⅔ cup of the mixture for the crumb topping. Press the remainder of the mixture evenly into the bottom of the prepared baking dish. This layer should be thin.
  5. Bake for 10 minutes or until the crust just begins to turn golden brown.
  6. Stir the pecans into the reserved crust mixture. Set aside.
  7. In a microwave-safe dish, combine the sweetened condensed milk and bittersweet chocolate chips. Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is melted and the mixture is smooth.
  8. Pour the chocolate mixture over the hot crust and spread it evenly using an offset spatula.
  9. Sprinkle the crumb topping over the chocolate layer. Drop teaspoonfuls of raspberry preserves on top. If the preserves are too thick, stir in 1 tablespoon of water to thin them out. Sprinkle with semi-sweet chocolate chips.
  10. Bake for 25 minutes or until the bars are set. Let them cool completely before cutting them into bars.

Notes

  • For a different texture, you can substitute the pecans with walnuts or almonds.
  • You can swap the raspberry preserves with other fruit preserves like strawberry, blueberry, or blackberry.
  • For a richer chocolate flavor, use all bittersweet chocolate chips or mix in some dark chocolate chips.
