This Cheesy Spicy Black Bean Skillet combines black beans, smoky spices, and melted cheddar cheese for a quick and flavorful weeknight dinner.

Ingredients

2 tablespoons olive oil

1 medium onion, chopped

5 garlic cloves, minced

¼ cup tomato paste

1 ½ teaspoons smoked paprika

1 teaspoon ground cumin

¼ teaspoon crushed red pepper flakes

2 (15 oz) cans black beans, drained and rinsed

½ teaspoon salt

¼ teaspoon black pepper

8 oz red enchilada sauce

3 oz 50% reduced-fat sharp cheddar cheese

4 lime wedges

Instructions

  1. Preheat the oven to 450°F.
  2. In a large oven-safe skillet, drizzle the olive oil and heat it over medium heat. Add the chopped onion and cook for 2-3 minutes, stirring occasionally, until softened.
  3. Add the minced garlic and stir for about another minute.
  4. Stir in the tomato paste, smoked paprika, cumin, and crushed red pepper flakes. Cook for 30 seconds to combine the flavors.
  5. Add the drained and rinsed black beans, salt, pepper, and red enchilada sauce. Stir everything together until well combined.
  6. Sprinkle the reduced-fat cheddar cheese across the top.
  7. Transfer the skillet to the preheated oven and bake for 5-10 minutes, or until the cheese is melted and golden brown.
  8. Remove from the oven and serve with lime wedges for a fresh squeeze of citrus over the top.
