Cabbage steaks are oven-roasted slices of cabbage seasoned with garlic, olive oil, salt, and pepper. They’re tender, slightly crispy on the edges, and make a healthy, low-calorie side or light main dish.

Ingredients

1 head cabbage

2 tablespoons light olive oil

2 tablespoons minced garlic, or to taste

½ teaspoon salt, or to taste

½ teaspoon ground black pepper, or to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the bottom off the cabbage so it stands flat. Slice into 1-inch thick rounds.
  3. Arrange the cabbage slices in a single layer on a large baking sheet or casserole dish.
  4. Drizzle olive oil evenly over each slice.
  5. Sprinkle minced garlic over the top, followed by salt and black pepper to taste.
  6. Cover the dish with aluminum foil to retain moisture.
  7. Bake for about 45 minutes, or until the cabbage is tender and the core can easily be pierced with a fork.
  8. Serve warm as a side dish or light main course.

Notes

Use green cabbage for best structure; red cabbage can be used for a colorful variation.

To add crispiness, uncover during the last 10 minutes of baking.

Store leftovers in the fridge for up to 3 days.

Reheat in oven, skillet, or microwave, though texture may vary.

Add herbs, spices, or cheese for more flavor variations.
