This Brown Sugar Banana French Toast Casserole is a sweet, comforting dish that combines the flavors of ripe bananas, caramelized brown sugar, and rich French toast. Ideal for breakfast or brunch, it's easy to prepare and can be made ahead of time.

Ingredients

1 loaf of French bread (about 12 ounces), preferably stale or day-old

4 ripe bananas, sliced

6 large eggs

1 1/2 cups milk

1/2 cup heavy cream

1/2 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

1/2 cup all-purpose flour (for topping)

1/2 cup brown sugar (for topping)

1/4 cup unsalted butter, cold and cubed (for topping)

1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Slice the French bread into 1-inch cubes. If the bread is not stale, leave the cubes out on a baking sheet overnight to dry them out.
  2. Grease a 9×13-inch baking dish and layer the cubed bread in it. Then, layer the sliced bananas over the bread cubes.
  3. In a mixing bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, and a pinch of salt until well combined.
  4. Pour the custard mixture evenly over the bread and bananas, making sure all the bread cubes are soaked. Press them down slightly to ensure even soaking.
  5. Cover the baking dish with plastic wrap and refrigerate for at least 2 hours or, ideally, overnight.
  6. Preheat the oven to 350°F (175°C).
  7. In a separate bowl, combine the all-purpose flour, brown sugar, cubed unsalted butter, and ground cinnamon. Use a fork or your fingers to mix the ingredients until the mixture resembles coarse crumbs.
  8. After chilling, remove the casserole from the refrigerator and sprinkle the brown sugar topping evenly over the top. Place the dish in the preheated oven and bake for 45-55 minutes, or until the casserole is set and the top is golden brown.
  9. Once done, remove the casserole from the oven and allow it to cool for a few minutes before serving. Serve warm with a dusting of powdered sugar, a drizzle of maple syrup, or a dollop of whipped cream if desired.
