This Breakfast Casserole is a savory, cheesy delight made with crescent rolls, breakfast sausage, eggs, and cheddar cheese. Perfect for breakfast, brunch, or dinner, it’s easy to prepare and always a crowd-pleaser.

Ingredients

1 can crescent rolls

1 pound mild breakfast sausage

6 eggs, beaten

2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13 baking dish with nonstick cooking spray.
  2. In a skillet, cook the breakfast sausage over medium heat, breaking it apart as it cooks. Once browned, drain the excess grease.
  3. Unroll the crescent rolls and spread them evenly over the bottom of the prepared baking dish.
  4. Evenly layer the cooked sausage over the crescent rolls.
  5. Pour the beaten eggs over the sausage, making sure the eggs spread evenly throughout the casserole.
  6. Top with the shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is melted and bubbly.
  8. Let the casserole cool slightly before slicing and serving.

Notes

  • Vegetarian Option: Swap the breakfast sausage for a veggie sausage or other plant-based protein.
  • Add Veggies: You can add sautéed vegetables like spinach, bell peppers, or onions for extra flavor and nutrition.
  • Different Cheese: Try using a different type of cheese, such as mozzarella or Monterey Jack, for a unique twist.
  • Spicy Option: For a spicier kick, use hot sausage or add a dash of hot sauce or chili flakes.
