Ingredients

1 cup maple syrup

1 cup granulated sugar

1 cup light corn syrup

½ cup unsalted butter

1 teaspoon baking soda

1 teaspoon pure vanilla extract

2 cups roasted peanuts (or preferred nuts like pecans or almonds)

Instructions

  1. Grease a square baking dish with butter or line with parchment paper.
  2. In a large saucepan over medium heat, combine maple syrup, granulated sugar, and light corn syrup, stirring until sugar dissolves.
  3. Boil the mixture without stirring until it reaches 300°F (hard crack stage) using a candy thermometer.
  4. Remove from heat and quickly stir in butter, baking soda, and vanilla extract carefully as it will bubble vigorously.
  5. Add roasted peanuts and stir until evenly coated.
  6. Pour the mixture into the prepared dish and spread evenly.
  7. Let cool and set at room temperature for about an hour before cutting into pieces.
