This Baked Crunchy Honey Buffalo Chicken combines crispy, golden chicken coated in a cornflake crust and tossed in a spicy-sweet honey buffalo sauce for a perfect balance of flavors. It's baked, not fried, making it a healthier alternative that still delivers bold and delicious taste.

Ingredients

6 cups cornflakes (use gluten-free if needed)

1/4 cup grated parmesan cheese

1 tablespoon smoked paprika

1 teaspoon onion powder

1 teaspoon garlic powder

2 large eggs, beaten

1 tablespoon hot sauce

2 pounds chicken breast or skinless thighs

Extra virgin olive oil, for drizzling

Blue cheese or ranch dressing, for serving

Sliced green onions, for serving

For the Honey Buffalo Sauce:

1/2 cup hot sauce

6 tablespoons salted butter

1-2 teaspoons seasoned salt

3/4 teaspoon chipotle chili powder

1/2 teaspoon cayenne pepper

2 tablespoons honey

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a food processor, combine cornflakes, parmesan, paprika, onion powder, garlic powder, and a pinch of salt. Pulse into fine crumbs. Alternatively, crush the crumbs in a ziplock bag.
  3. Transfer the crumbs into a shallow bowl.
  4. In a separate bowl, beat the eggs and add hot sauce. Toss the chicken pieces in the mixture until well-coated.
  5. Dredge the chicken in the cornflake crumbs, ensuring each piece is fully covered. For a thicker coating, dip the chicken back in the egg mixture and crumbs again.
  6. Place the chicken on the prepared baking sheet. Drizzle with olive oil and bake for 20-25 minutes, or until the chicken is crispy and cooked through.
  7. While the chicken bakes, make the honey buffalo sauce by melting hot sauce, butter, seasoned salt, chipotle chili powder, and cayenne pepper over medium heat. Stir until well-combined and remove from heat. Stir in honey.
  8. Once the chicken is done, drizzle with the buffalo sauce and top with sliced green onions. Serve with blue cheese or ranch dressing and enjoy!
