A timeless strawberry pie recipe with a choice of strawberry Jell-O or a homemade glaze. This dessert is perfect for any occasion, offering a refreshing and sweet treat.

Ingredients

1 1/2 cups sugar

2 cups water

4 tablespoons cornstarch

1 quart fresh strawberries

1 box strawberry Jell-O

1 prepared pie crust (using your favorite recipe or store-bought)

Instructions

  1. Wash and cut the strawberries into pieces—small berries in half, medium berries into quarters, and large berries into six or more pieces. Drain any liquid and set the strawberries aside.
  2. For Gram's Strawberry Pie (with Jell-O glaze): In a saucepan, combine 2 cups of water and 1 1/2 cups sugar. Heat over medium-high heat.
  3. Mix the cornstarch with the remaining 1/2 cup of water until dissolved. Add this mixture to the saucepan, stirring constantly until it thickens and becomes clear (about 5 minutes).
  4. Slowly stir in the strawberry Jell-O until it dissolves completely. Remove from heat and let it cool for about 10 minutes.
  5. Gently fold the strawberries into the warm glaze, making sure the fruit is evenly coated.
  6. Spoon the strawberries into the prepared pie shell, adding as much of the remaining glaze as desired.
  7. Refrigerate the pie for a couple of hours before serving. Top with whipped cream before serving.
  8. For the No-Jell-O Strawberry Pie Glaze: In a saucepan, combine 1 cup of water and 1/2 cup sugar, and bring to a boil.
  9. Mix the cornstarch with a small amount of water to dissolve, then slowly add this to the boiling mixture.
  10. Stir constantly until the glaze thickens.
  11. Pour the glaze over the strawberries and fold gently.
  12. Spoon the glazed strawberries into the prepared pie crust.
  13. Refrigerate for a couple of hours before serving with whipped cream.

Notes

  • Store the pie in the refrigerator for up to 3 days, covered to prevent it from absorbing other food odors.
  • Use a sugar substitute for a sugar-free version or agar-agar for a vegan alternative.
  • For a lighter crust, use a graham cracker crust.
  • Ensure you pre-bake the crust to prevent it from becoming soggy.
